Chicken Tacos


Last night for supper we had Chicken Tacos. We pile ours with Spanish Rice and Black Beans so I guess they are more like a burrito.


What you need:
1 Chicken breast for each person eating
1 pack of taco seasoning
1 medium onion
3/4 cup of water
1 cup of corn

Boil your chicken breasts until cooked. Shred chicken.
Saute the chopped onion until tender.
Add 3/4 cup of water to skillet and add the taco seasoning.
Add shredded chicken & corn and stir until all is well mixed.
Cook for about 10 minutes until water is absorbed.
Layer on your taco shell.



I always serve with black beans. Shred a carrot and put in black beans and heat up. The carrot sneaks a little more nutrition into the beans and you can't taste it!

When I was cleaning up last night I just mixed the beans, rice and chicken together and I think it made enough filling for about 3 more people so this would be an easy and cheap meal to stretch out.
